Sefer Ha’mitzvos Ha’Katzar (The concise book of mitzvos) By the Chofetz Chaim
This book lists the Torah mitzvos that can be observed today
First Section – the Positive Commandments
48. It is a positive commandment to ritually slaughter an animal or fowl if one wants to eat its meat
As it states in Devarim (Deuteronomy) 12:21, “you shall slaughter from your cattle or your flock… as I have commanded you.” It was verbally taught from G-d to Moshe, our teacher, of blessed memory, the laws of ritual slaughter: the laws of the gullet and the windpipe, the laws of cutting most of the tube for a fowl and cutting most of both in an animal, and about pausing, pressing the knife, inserting it under cover, cutting at a slant, and tearing loose.
This is required in all places and at all times for men and for women.
