When discussing the halachos of Kohanim, the passuk says “You will sanctify
him (the Kohen).” The Gemara in Gittin explains this passuk to mean we
must act towards the Kohanim with respect. The examples given are that a Cohen reads from the Torah first, to make the zimun for Birkas HaMazon, to take the first portion of food, and other such gestures of respect.
